Ingredients
- 1 Eggplant
- 2 Garlic cloves
- 3 tbsp Olive oil
- Thyme, dried
- Rosemary, dried
- Chilli flakes
- Salt
- Pepper
Instructions
- Wash the aubergine and cut into approx. 0.5-1 cm thick slices and distribute in a tin or on a baking sheet. Preheat the tube to 200 ° C top and bottom heat.
- Put the olive oil in a bowl, peel the garlic cloves and press them into the bowl with the oil. Add all the spices and stir everything well.
- Distribute the spice oil evenly on the aubergine slices (e.g. with a brush) and pour it into the tube.
- Leave in the oven for about 20-30 minutes, take out. Drizzle with olive oil and / or balsamic vinegar if you like and garnish with basil leaves. Tastes delicious warm and cold! 🙂
