Spice Cake Star

The perfect spice cake star recipe with a picture and simple step-by-step instructions.

  • 80 g Block chocolate
  • 4 piece Eggs
  • 100 g Soft butter or margarine
  • 150 g Sugar
  • Grated zest of 1/2 untreated lemon
  • 1 tbsp Soluble coffee powder
  • 1 tsp Ground cinnamon
  • 1 pinch each of ground cloves and ground cardamom
  • 0,5 tube Taste of rum
  • 125 g Flour
  • 3 tsp Baking powder
  • 125 g Ground almonds
  • 2 tbsp Milk
  • 20 g Flaked almonds
  • 200 g Whole milk couverture
  • 0,5 tsp Powdered sugar
  • Fat for the shape
  1. Finely grate the chocolate. Separate eggs. Mix the soft fat and sugar for 10 minutes with the whisk of the hand mixer until creamy. Stir in egg yolks one at a time. Stir in chocolate, lemon peel, coffee powder, spices and rum flavor. Mix the flour, baking powder and ground almonds and stir in briefly with the milk. Beat the egg whites until stiff and fold carefully into the dough in 2 portions.
  2. Pour the dough into a greased star shape (1.25l content) and smooth it out. In the preheated oven (electric stove: 200 ° C / convection: 175 ° C / gas: level 3) approx. Pre-bake for 5 minutes. Reduce the temperature (electric stove: 175 ° C / convection: 150 ° / gas: level 2). Bake the cake for another 45-50 minutes. Take the cake out of the oven and let it rest in the pan for 10 minutes. Overturn on a wire rack and let cool down.
  3. Lightly toast the almond flakes in a pan without fat, remove and let cool down. Roughly chop the couverture and melt it in a hot water bath. Let the couverture cool down a bit. Then heat again and pour evenly over the star. Sprinkle with flaked almonds and let sit. Serve dusted with powdered sugar.
