Can I still use grilled meat from last summer (August) that was continuously chilled at -18°?

The shelf life of frozen meat mainly depends on the type of meat and the fat content of the meat.

Beef can be frozen for between 10 and 12 months, lean pork for up to 8 months. Fatty pork should leave the freezer and be prepared after 4 months at the latest. Chicken meat can be kept for up to 10 months.

So if you have frozen a beef steak or tenderloin that has been refrigerated throughout, it should still be usable. On the other hand, you should not prepare and eat a fatty pork neck or bundle (pork belly) after such a long time.

If the meat has been lying around uncooled for a long time at a barbecue, for example, the shelf life is reduced. Bacteria, yeast or mold that have multiplied due to the heat fall into a “cold sleep” at low temperatures. However, most microorganisms survive, become active again on thawing and can multiply. Therefore, thaw meat slowly in the refrigerator, discard the thawing liquid and cook the meat through as soon as possible.
