For a simple way to store peeled potatoes, you need a bowl full of water. Add a dash of vinegar or lemon juice – a quarter of a tablespoon to a liter is considered good measure – stir and add the potatoes. The bowl then goes into the fridge. On the one hand, it is important that the peeled potatoes are completely covered with water and, on the other hand, that you don’t overdo it: Since water basically removes important nutrients from the tubers, they also lose their taste there over time, you should continue with the final preparation even then Don’t wait more than a day if you’re storing peeled potatoes in the fridge after covering them with vinegar or citrus water.
Cover peeled potatoes with water and cook the next day
If you peel potatoes and later cook them, discard the acidic water as soon as you take them out of the fridge to use fresh to cook. For fried potatoes, dry the tubers well. Should the water in which you store the peeled potatoes become discolored, simply dump it out and replace it.
