Italian ice cream recipes: The perfect basis
To make gelato at home, you first need to make the base of the ice cream. You will need 4 egg yolks, 240 ml whipped cream (at least 36% fat content), 170 g sugar, 480 ml whole milk, 2 tsp vanilla extract, and a pinch of salt.
- First, put the milk in a saucepan over medium-high heat and warm it up. Now, wait until the milk starts to simmer.
- Meanwhile, mix the egg yolks with the sugar. Then add some of the hot milk to the mixture and mix well again.
- Then slowly stir the finished mixture into the simmering milk and let everything simmer for about 7 to 8 minutes. Meanwhile, stir well.
- Once the mixture has thickened, you can remove it from the heat and strain it through a fine sieve. Then add the vanilla extract and salt to the mixture and let it cool down completely. Stir about every 5 minutes.
- As soon as the mass has cooled completely, you can put it in the fridge. Now, wait for at least 5 hours before processing them further.
- After the time has passed, prepare the cream. Beat them stiff and then fold them into the cold mixture.
- After that, it’s time to add a flavor of your choice. This can be pureed fruit, for example. Then fill the ice cream into a container and leave it in the freezer for about 4 hours. Stir the ice cream every half hour until ready.
Chocolate Gelato: Here’s how
Once you’ve prepared the base of the gelato, for a chocolate flavor, follow these steps:
- First, make a chocolate ganache. For this, you need 200 ml of cream and 200 g of chocolate of your choice.
- To make the ganache, bring the cream to a boil and then remove it from the heat. Then add the chopped chocolate and stir the mixture well so that the chocolate melts.
- Then let the ganache cool down completely. Then stir them into the gelato base. In addition, you can add a few chocolate chips to the ice cream and then freeze it as described in the instructions.
