Make raw food chocolate yourself: These are the right ingredients

The right ingredients and their quality are particularly important when making your own raw food chocolate:

  • The basic recipe for raw white chocolate consists of the following ingredients: 100 grams of raw cocoa butter, 50 grams of white almond butter, 50 grams of raw agave syrup or something comparable for sweetening, and a teaspoon of ground vanilla.
  • For raw chocolate containing cocoa, you need 100 grams of raw cocoa butter, two heaped tablespoons of white almond butter, three tablespoons of coconut blossom sugar, or something comparable for sweetening, two tablespoons of raw cocoa powder, and the pulp of a vanilla bean.
  • Ground almonds are also suitable instead of almond butter.
  • You can substitute coconut oil or butter for some of the cocoa butter.

How to make raw chocolate

  • Melt the cocoa butter (and if necessary the coconut oil or coconut butter) in the oven at below 40 degrees.
  • Put all the ingredients in a blender or mix them with a whisk in a suitable container.
  • Next, you have to pour the chocolate mass into a suitable form, for example, a chocolate bar or praline form. It is best if you place the silicone molds on a stable surface. This makes it easier to transport to the refrigerator. Alternatively, you can line a small baking tray with parchment paper and spread the chocolate mixture on it.
  • Allow your chocolate to cool slightly outside of the fridge before placing it in the fridge for 2-3 hours to set.

You can make your own chocolate creations using the basic recipes. There are no limits to your imagination:

  • Add crunch with chopped almonds, whole hazelnuts, walnuts, pistachios, other nuts, or seeds.
  • Goji berries, Aronia berries, sultanas, dried fruits, hemp seed, coconut flakes, or cocoa nibs make for an unusual taste experience.
  • Season your raw food chocolate with cinnamon or sea salt, for example.
  • You can refine raw white chocolate with matcha powder.
