Ingredients for 2 servings:
- 4 eggs
- 1 tsp butter
- ¼ cup water
- ½ cup cream
- 1 tsp mustard
- Salt
- 1 bunch of chives
- 1 tbsp flour

A recipe from Saarland
Hard-boil the eggs, slice or cut into eighths, and set aside on a plate. Rinse the chives, pat dry, and cut into small rings. Heat the butter in a medium saucepan (it shouldn’t brown, just melt). Whisk the flour into the melted butter. Immediately add the water and stir vigorously until a smooth sauce forms. Bring to a boil. Stir in the cream and mustard and simmer over low heat for a few minutes. Carefully fold in the eggs and chives, and season to taste with salt. I discovered and loved this sauce in Saarland. It goes well with potatoes and salad!
