Vegetarian salsify salad in the style of herring

Ingredients for 4 servings:

  • 1 jar salsify(s), pickled
  • 1 apple, sour
  • 1 onion(s)
  • 4 m.-sized pickle(s)
  • 1 jar salad cream (Miracle Whip yogurt)
  • 1 tbsp mustard, medium hot
  • salt and pepper
  • n. B. vinegar
  • n. B. Oil

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Place the salsify in a colander and drain well. Meanwhile, peel and core the apple, and cut into small cubes. Also cut the onion and pickles into small cubes. Mix the Miracle Whip yogurt with the mustard, salt, pepper, vinegar, and oil, and season to taste. Combine all ingredients and refrigerate for 1 hour. This dish goes well with boiled and/or oven-baked potatoes.
