Ingredients for 2 servings:
- 5 m.-sized potatoes, raw
- 2 medium-sized onions, diced
- lots of oil
- salt and pepper
- e.g. chili powder
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
from raw potatoes
Peel the potatoes and cut into evenly thin slices. Heat oil in a large frying pan and reduce heat to medium. Add the potatoes to the pan and put the lid on. It is very important to cook covered at first, as the water in the potatoes will evaporate and cook the potatoes. It is also important not to set the temperature too high. After about 15 minutes, remove the lid, turn the potatoes over, and cover again for another 5 minutes. When the potatoes are tender, add the onions and continue to fry uncovered at a higher temperature. Add a little more oil if desired. Season at this point. Turn the potatoes over several times and serve when the potatoes are golden brown and crispy. I like this type of fried potatoes because it saves me the cooking and the potatoes don’t fall apart as easily as boiled fried potatoes.
