Swabian apple fritters

Ingredients for 4 servings:

  • 3 eggs
  • 100 g flour
  • 50 g sugar
  • 1 tbsp oil
  • 150 ml wheat beer (Hefeweizen)
  • 1 pinch of salt
  • 4 large apples, sour
  • 1 lemon(s), juice
  • Oil for frying
  • powdered sugar
  • Cinnamon

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Separate the eggs. In a bowl, whisk the egg yolks with the flour, sugar, and oil using a hand mixer until a smooth batter forms. Gradually mix in the beer. Beat the egg whites with the salt until stiff peaks form and fold into the batter. Let it rest for a few minutes to allow the batter to swell. In the meantime, peel the apples and core them using an apple corer. Cut the apples into approximately 1 cm thick slices and drizzle with lemon juice to prevent them from browning. Heat the oil in a high-fat frying pan to approximately 170°C. When small bubbles form around a wooden spoon, the oil is at the right temperature. Stir the batter thoroughly again, especially if it has been standing for a while. Dip the apple slices into the batter in batches and fry in the hot oil until golden brown on both sides. Remove with a slotted spoon and place on kitchen paper to drain. Keep warm in the oven until all the apple slices are cooked. To serve, dust with powdered sugar and cinnamon or cinnamon-sugar. Apple fritters go very well with vanilla sauce, vanilla ice cream or fruit compote.
