Ingredients for 4 servings:
- 2 ½ kg potatoes, floury or mainly waxy
- 4 eggs
- 1 cube of fresh yeast or 1 bag of dry yeast
- 250 ml milk, lukewarm
- 1 tbsp salt
- 250 g flour
- 1 bacon rind

Working time approx. 50 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 30 minutes

If you don’t have a lid, it’s also delicious from a pan. Peel and finely grate the potatoes. Dissolve the yeast in the lukewarm milk. Place the grated potatoes, eggs, salt, and yeast milk in a large bowl and mix with the flour until smooth. Cover the dough with a clean kitchen towel and let it rise for about 30 minutes. Heat the lid/pan until hot, then turn the heat down slightly. Rub the lid/pan with the bacon rind before each serving. Use a ladle to place “patties” about the size of your palm onto the hot lid/pan. When the top becomes matte, turn the place over. When the place is ready, brush with salted butter, roll up, and enjoy.
