Ingredients for 3 servings:
- 500 g potatoes
- 250 g quark
- 1 tsp cornstarch
- Salt
- Caraway seeds
- oil

Saxon-style quark balls
Peel the potatoes and grate them while they’re still raw using an electric food processor. In the past, this was done by hand! Place them in a bowl and use a small ladle to skim off any excess water from the potatoes. Then mix the quark, salt, and a little caraway seeds with the potatoes. Add cornstarch. Heat oil in a pan and drop small spoonfuls of potatoes into the pan. Fry until golden brown. Serve with applesauce.
