Sunken plum cake with meringue topping

Ingredients for 1 servings:

  • 600 g plum(s)
  • 3 eggs
  • 100 g sugar
  • 120 g low-fat curd cheese
  • 120 g flour
  • 3 tbsp cinnamon sugar
  • 3 egg whites
  • 150 g sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 25 minutes

Wash and pit the plums. Separate the eggs. Using a mixer, combine the egg yolks with the sugar, quark, and flour. Beat the egg whites until stiff and fold into the quark mixture. Pour the batter into a greased 26 cm cake tin, top with the plums, and sprinkle with cinnamon sugar. Bake on the middle shelf at approximately 175-180°C for approximately 45 minutes. Beat the three egg whites until stiff, gradually adding the sugar. Brush the beaten egg whites onto the cake, and return to the oven at approximately 180°C for another 5-10 minutes, until the meringue begins to brown.
