Ingredients for 1 servings:

  • 3 apples
  • 130 g flour
  • 80 g butter, room temperature
  • 3 eggs
  • 5 tbsp sugar
  • 1 tbsp water
  • 250 g quark
  • Vanilla
  • sugar, brown

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 45 minutes

Makes approx. 8 pieces.

Preheat the oven to 200°C. Combine the flour, butter, 1 tablespoon of sugar, 1 egg yolk, salt, and water; knead into a smooth dough. Wrap in cling film and chill for half an hour. Peel the apples and cut into thin slices. Beat the quark with the vanilla, the remaining sugar, 2 eggs, and the egg white from the shortcrust pastry until fluffy. After the chilling time, press the dough into a greased springform pan, ensuring it rises slightly at the edges and the filling doesn’t leak out. Pour in the quark mixture and tuck the apple slices into the cream. Bake the cake at 200°C for 30 minutes. Sprinkle with brown sugar and return to the oven for another 15 minutes. Let the cake cool and serve.
