Swabian flax wraps – yeast slurry

Ingredients for 1 servings:

  • 250 g flour
  • 20 g yeast
  • 125 g butter, soft or margarine
  • 1 egg(s)
  • ½ cup(s) milk, lukewarm
  • 1 pinch of salt
  • 75 g granulated sugar for rolling

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Makes about 15 loaves. Sift flour into a bowl, add small pieces of yeast, and mix with butter, egg, milk, and salt to form a yeast dough. Let it prove for about 20 minutes. Stretch egg-sized pieces of dough (about 40g each) out, twisting the two ends in opposite directions with both hands. Coat in sugar and place on a baking tray lined with baking paper. Optionally, let it prove for another 30 minutes. Bake in a preheated oven at 180°C (top/bottom heat) on the middle rack for about 10 minutes until very lightly browned. Tastes best warm!
