Lyoner cake – authentic Saarland

Ingredients for 6 servings:

  • 500 g sausage meat, raw, fine, not pre-cooked
  • 500 g Lyoner
  • 500g Gouda
  • 2 stalk(s) leeks
  • 6 eggs
  • 150 g flour
  • 1 packet of baking powder
  • 2 bell peppers, color of your choice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Cut the Lyoner, Gouda, leek, and bell pepper into small cubes, place in a large bowl, and set aside. Beat the eggs until frothy. Stir in the sausage meat and mix well. Add the flour and baking powder and mix well again. Add to the remaining ingredients and mix everything carefully but thoroughly. Spread on a baking sheet or pour into casserole dishes and smooth the surface. Bake at 175-190 degrees Celsius (depending on your oven) for about 1 hour. It heats well but is also delicious cold, for example, on bread. Serve with a green salad and fresh baguette as a side dish.
