Ingredients for 6 servings:
- 1 tbsp olive oil
- 500 g minced meat, mixed
- 70 g bacon, finely diced
- 1 garlic clove(s)
- 1 large onion(s), finely chopped
- 1 bell pepper(s), red
- 2 bell peppers, grilled and pickled (cut into small pieces)
- 1 can of tomatoes, pureed
- 500 ml vegetable stock
- 1 tbsp Italian herbs (1 tbsp for dried herbs and up to 3 tbsp for fresh herbs)
- 1 cup rice
- 1 cup sour cream
- 1 tbsp paprika powder, sweet
- 1 tbsp paprika powder, rose hot
- salt and pepper

plus a thick piece of fresh bread…mmmmm….
Heat the oil in a pan and lightly fry the onion and garlic. Then fry the minced meat. In the meantime, chop the bell peppers, including the pickled ones, and add them to the meat. Deglaze the meat mixture with the passata and vegetable stock and simmer for about 20 minutes. In the meantime, cook 1 large cup of rice separately. To refine the dish: stir in 1 cup of sour cream and the herbs before serving. Add the rice and season to taste with: 1 heaped tablespoon of sweet paprika and 1 tablespoon of hot paprika, salt and pepper. Tip: You can of course also cook the rice completely in the stew, but make sure there is enough liquid, otherwise it will burn very easily!
