Ingredients for 3 servings:
- 500 g kale, cleaned, washed, roughly chopped
- 500 g onion(s), finely chopped
- 250 ml water
- 3 Mettwurst (smoked sausages)
- 1,000 g potatoes
- 50 g bacon, fattier
- salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 20 minutes
Place the kale, onions, and water in a pot and bring to a boil. Then cook over medium heat in a covered pot, stirring occasionally. After about an hour of cooking, add the sausages and simmer for another 15 minutes. In the meantime, peel, wash, and halve the potatoes and cook in salted water in a second pot until tender. When the cabbage is tender, remove the sausages and set aside. Season the vegetables with pepper and salt. Add the potatoes and mash everything finely with a potato masher. Dice the bacon and fry it in a pan over moderate heat. Remove the cracklings. Add the hot bacon fat to the vegetables. Slice the sausages and return them to the cabbage. Mix everything together thoroughly. Stir in the bacon fat well. Finally, season again with pepper and salt.
