Ingredients for 4 servings:
- 80 g smoked bacon
- 2 m.-sized onion(s)
- 1 ½ liters of meat broth or vegetable broth
- 500 g wild mushrooms, fresh, cleaned or frozen
- 300 g potatoes
- 1 egg yolk
- 2 tbsp sour cream
- 2 m.-large gherkins
- 1 bay leaf
- 2 carnations
- Parsley
- salt and pepper
- Bread rolls in slices, toasted (semmel slices)

Peel the potatoes and onions. Dice the potatoes and one onion. Stud one onion with the bay leaf and cloves. Dice the smoked bacon. Finely chop the gherkins. Clean or thaw the wild mushrooms. Mix the egg yolk and sour cream. Toast the bread slices. Fry the smoked bacon and sauté the diced onions in it. Add the wild mushrooms, season with salt and pepper, and simmer for about 5-10 minutes. Then top up with the meat or vegetable broth, add the skewered onion, and simmer over medium heat for about 15 minutes. Add the diced potatoes and the finely chopped gherkin and cook. Season to taste with salt, pepper, and the egg yolk and cream mixture. Do not allow to boil again. Finally, garnish with parsley and, if desired, serve over the toasted bread slices.
