Savoy cabbage stew with mushrooms

Ingredients for 4 servings:

  • 1.2 kg smoked pork, boned
  • 25 g porcini mushrooms, dried
  • 1 liter of water, hot
  • 3 tbsp oil
  • 1 onion(s)
  • 1 bay leaf
  • 1 carnation(s)
  • 500 g potatoes
  • 500 g carrot(s)
  • 500 g savoy cabbage
  • salt and pepper
  • nutmeg
  • 200 small mushrooms
  • 1 tbsp clarified butter

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 40 minutes

Soak the porcini mushrooms in 1 liter of hot water. Brown the smoked pork in hot oil on all sides. Stud the onion with a bay leaf and clove and add it to the smoked pork along with the porcini mushrooms and the soaking water. Season with pepper, cover, and simmer gently for 45 minutes. Slice the potatoes and carrots, and cut the savoy cabbage into strips. Add the vegetables to the stew after 45 minutes and cook for another 25 minutes. Season with salt, pepper, and nutmeg. Brown the mushrooms in hot clarified butter. Remove the meat from the pot and dice it. Add it to the stew along with the mushrooms.
