Buy the sausage already sliced ​​1 cm thick and cut these into small cubes. Chop the onion into small cubes and the spring onion into thin rings. Dice the gherkins and bell peppers in the same way. Chop or press the garlic clove. Mix all the salad ingredients. For the salad dressing, mix the vinegar, oil, mustard, stock powder, and the spices mentioned here until smooth and pour over the sausage salad. To give the salad a juicy, fresh touch, you can add a little of the gherkin juice, if desired. Mix the salad thoroughly, season to taste, and finally add the finely sliced ​​chives and, if available, some chopped parsley. The salad tastes best when refrigerated for about an hour. It goes very well with boiled or fried potatoes. Fresh Franconian country bread also goes well with it.
