Ingredients for 4 servings:
- 125 g cooked ham
- 125 g apples
- 125 g gherkins
- 125 g potatoes, cooked
- 100 g carrot(s), cooked
- 100 g celery, cooked
- 1 onion(s)
- 1 tbsp capers
- 1 tsp herbs
- 2 anchovy fillets
- 1 tbsp, heaped cornstarch
- 125 ml water
- 1 egg yolk
- 1 tsp mustard
- 1 tsp sugar
- Salt
- 1 tbsp lemon juice
- 125 ml oil
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 40 minutes
for dinner or party
Dice the first five ingredients into pea-sized cubes. Chop the capers and anchovy fillets, as well as the herbs if not using frozen herbs. Place everything in a salad bowl. Make a mock mayonnaise by boiling the water, adding the cornstarch, and stirring until lump-free. Remove everything from the heat and mix in the remaining six ingredients. Pour this salad dressing over the remaining ingredients in the bowl, mix well, and refrigerate everything for at least 1 hour. Garnish with cucumber, a boiled egg, and a tomato.
