Ingredients for 4 servings:

  • 4 onions
  • 2 apples
  • 50 g flour
  • 600 g beef liver(s)
  • 30 g clarified butter
  • ½ bunch parsley
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Slice the onions into rings. Core and slice the apples into rings. Thinly slice the liver. Mix the flour and pepper and coat the liver in it. Heat the lard in a pan and fry the liver over medium heat for 2-3 minutes on each side. Remove the liver and keep warm. Fry the onion rings in the frying fat until golden brown. Add the apple slices and fry briefly. Add the liver and season everything with salt and pepper. Finely chop the parsley and sprinkle over the liver. Serve with mashed potatoes and sauerkraut.
