Ingredients for 4 servings:
- 500 g potatoes
- 300 g flour
- 1 egg(s) (not necessary)
- ½ tsp salt
- butter
- Sugar
- some cinnamon, if you like

Boil and peel the potatoes. While still warm, press them through a potato ricer and then let them cool, preferably overnight. The next day, knead the potato mixture with flour, egg, and salt until you have a firm dough that no longer sticks to your hands. You may need to add a little more flour. Divide the dough in half and roll each one out thinly. Once done, cut them into 10-15 cm squares. This amount of dough is enough for about 18 potatoes. Then, slowly fry the Detscher over medium heat without fat in a cast iron or non-stick pan until the flatbreads/Detscher start to bubble, then turn them over and finish frying. Brush the finished, still-hot Detscher well with butter and sprinkle with plenty of sugar, then roll them up, just like you would with egg pancakes. Stack them on top of each other in a preheated bowl or other container to keep them hot. They’re eaten straight from the hand and served with coffee or malt coffee. A true treat, worth the effort! Only suitable for immediate consumption; when cold, they become tough and tasteless!
