Broad beans with bacon

Ingredients for 1 servings:

  • 300 g beans, thick, frozen, can or jar
  • 150 g smoked bacon (belly bacon)
  • 250 ml vegetable stock
  • savory
  • salt and pepper
  • Flour or sauce thickener, light
  • 150 g potatoes

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

This is how I make them

Thaw frozen beans, drain canned or jarred beans, and reserve the liquid. Cut the bacon (without the rind) into 1-2 cm thick slices. Peel and roughly dice the potatoes. Bring the beans to a boil in a saucepan with the broth and any bean water. Then reduce the heat, add the potatoes, bacon, and savory, season with salt and pepper, and simmer for 20-30 minutes over medium heat. If the sauce is too thin, stir in a little sauce thickener, or mix a little flour with a little cold water until smooth, add, and cook until the sauce thickens. If desired, the potatoes can also be boiled separately and served as parsley potatoes.
