Ingredients for 2 servings:

  • 1 onion(s)
  • 350 g potatoes, mostly waxy
  • 2 pear(s), sour
  • 5 slices of bacon
  • 2 tbsp oil
  • Salt and pepper, from the mill
  • 600 ml vegetable stock
  • 1 can white beans (250 g drained weight)
  • 3 stalks of savory or 1 tsp dried savory

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Pear and potato stew with beans and bacon

Peel and finely dice the onion. Peel and wash the potatoes, and chop into large pieces. Core, peel, and thinly slice ½ a pear. Cut the bacon into pieces approximately 4 cm in size. Heat the oil in a pan and fry the bacon until crispy; remove and drain on kitchen paper. Sauté the diced onion in the frying fat until translucent, add the potatoes and pear slices, fry briefly, and season with salt. Deglaze with the stock, cover, and simmer over medium heat for 20 minutes. Core 1 ½ pears and cut into thin wedges. After 15 minutes, stir into the potatoes. Drain the beans, rinse under running water, and drain well. Strip the leaves from 2 savory stalks and chop them. Mix the beans and chopped savory into the potatoes and heat until hot. Season with salt and pepper. Briefly stir in the bacon and serve sprinkled with the remaining savory.
