Ingredients for 4 servings:
- 750 g beef (ribeye, shank, etc.)
- 2 liters of meat broth
- 300 g pearl barley
- 2 onions
- 1 stalk(s) leek
- 2 carrots
- 2 potatoes
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Bring the beef to a boil with the cold broth, cover, and let it simmer for about 1 hour. Then add the pearl barley and bring to a boil. Simmer gently for another hour with the lid on. Peel and dice all the vegetables and potatoes, add them to the soup, and finish cooking. Serve with hearty farmhouse bread.
