Persian carrot salad

Ingredients for 6 servings:

  • 500 g carrot(s), finely grated
  • 2 large oranges
  • 90 g raisins
  • 60 g almonds, lightly roasted
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp cumin, ground
  • ½ tsp cinnamon, ground
  • ½ tsp sugar
  • 1 lime(s)

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

great side dish!

Place the carrots in a bowl. Peel and remove the white pith from the oranges. Remove the segments and chop. Add them to the carrots along with the raisins and halved almonds. Dressing: Combine the oil, lime juice, spices, and sugar in a screw-top jar and pour over the salad. Toss the salad and refrigerate for 1 hour. Garnish with lime slices.
