Ingredients for 5 servings:

  • 2 kg potatoes
  • 250 g dried meat
  • 2 stalk(s) leeks
  • 1 egg(s)
  • salt and pepper

Grate the peeled, raw potatoes and squeeze the juices lightly. Mix in the egg and finely chopped leek, and season to taste with salt and pepper. Place the diced jerked beef in a slightly larger cast iron skillet and stir into the potato mixture. Bake everything in the oven at 200°C (400°F) for 2 hours until nice and crispy. Serve with applesauce. For me, this recipe is a dream. Tip: Don’t over-season it; the jerked beef adds a lot of flavor.
