Ingredients for 6 servings:

  • 1 kg carrot(s)
  • 300 g pork knuckle(s) or pork belly
  • 2 liters of vegetable broth
  • 4 large potatoes
  • salt and pepper
  • Parsley
  • Butter and flour (roux)
  • Sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the meat in the vegetable broth for 45-60 minutes. Peel and dice the carrots and potatoes, and add them to the broth, along with salt, sugar, and pepper. Cook until the vegetables are tender. Remove the meat from the bone and cut into bite-sized pieces, then add to the stew. Add a buttery roux to thicken the broth. Add some chopped parsley, if desired.
