Classic lentil stew

Ingredients for 4 servings:

  • 250 g lentils, brown
  • 300 g smoked belly, streaky in one piece
  • 1 onion(s), finely diced
  • 1 bunch soup greens, diced
  • 1 carrot(s), diced
  • 400 g potatoes, diced
  • salt and pepper
  • 2 bay leaves
  • some thyme
  • some marjoram
  • 2 pairs of Frankfurter sausages or Wienerle
  • some vinegar

Instructions

Working time approx. 35 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 1 hour 20 minutes; Total time approx. 13 hours 55 minutes

Soak the lentils in 1 1/2 liters of water overnight. Add the lentils and bacon, along with the spices, to a boil using 3/4 liters of the soaking water. Reduce heat to low and simmer for about 40 minutes. Then add the vegetables, but without the potatoes, and simmer for another 20 minutes. Then add the diced potatoes and simmer for another 20 minutes. About 10 minutes before the end of the cooking time, slice the sausages and add them. Season with salt, pepper, and vinegar. Pass the vinegar around the table so everyone can season to taste.
