Mike's Best Chicken Soup

Ingredients for 4 servings:

  • 1 chicken (meat chicken)
  • 150 g celeriac
  • 150 g carrot(s)
  • 150 g peas
  • ½ stalk(s) leek
  • some ginger, fresh
  • 150 g noodles (soup noodles)
  • 1 bunch of parsley
  • Salt
  • pepper
  • Soy sauce
  • lemon juice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Place the chicken in a large pot and just cover with water and simmer for about 2 hours. Then remove the chicken from the stock and let it cool slightly. Meanwhile, dice the celeriac and carrots, and finely slice the leek. Then remove the skin, remove the meat from the bones, and chop finely. Reduce the fat in the stock by pouring it into a tall container and skimming off any excess fat. Sauté the soup vegetables in a little fat and deglaze with the stock. Add the meat, noodles, and peas and simmer for 10 minutes. Season to taste with grated ginger, salt, pepper, soy sauce (if desired), and a squeeze of lemon. Garnish with freshly chopped parsley before serving.
