Ingredients for 1 servings:
- 250 g almonds, ground
- 200 g powdered sugar
- 6 eggs
- 1 organic lemon(s), grated peel
- 1 vanilla pod(s), including the pulp
- 1 pinch of salt
- e.g. cinnamon
- Powdered sugar for sprinkling
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes
Separate the eggs and beat the egg whites until stiff. Whisk the egg yolks and sugar until frothy. Add the almonds, vanilla, cinnamon, salt, and lemon zest, then fold in the whipped egg whites. Pour everything into a prepared 26 cm springform pan. Bake in a preheated oven at 170°C (convection oven) for approximately 50-60 minutes. Once cooled, sprinkle with powdered sugar.
