Ingredients for 4 servings:

  • 1 kg swede(s)
  • 2 onions
  • 1 tbsp clarified butter
  • 100 g ham, diced, smoked
  • 750 ml water
  • 800 g potatoes (unpeeled)
  • 4 sausages (smoked Mettwurst)
  • 2 tbsp parsley, chopped
  • Salt
  • Sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the turnip and cut into small, finger-thick pieces, each 3-4 cm long. Wash, peel, and dice the onion. Heat the lard and diced ham in a large saucepan, add the diced onion, and sauté until translucent. Add the turnip sticks and 750 ml water, salt, and sugar, and simmer for about 30 minutes. Meanwhile, peel the potatoes, halve them, and add them to the turnips along with the Mettwurst sausages. Simmer for another 30 minutes. Remove the Mettwurst sausages from the vegetables and keep warm. Mash the vegetables, season to taste, arrange in a mound on a platter, top with the Mettwurst sausages, and serve garnished with parsley.
