Turnip greens or turnip stem stew

Ingredients for 8 servings:

  • 2 kg turnip greens
  • 700 g roast pork (preferably Lummerbraten)
  • 1 kg potatoes
  • 4 tbsp sunflower oil
  • 1 ½ liters of water
  • salt and pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 3 hours

Heat the sunflower oil in a pan. Cut the meat into small cubes and brown in the hot oil. Take about 200 ml of the water and add it to the meat. Braise the meat for 45 minutes. In the meantime, wash the turnip greens thoroughly, trim off the first 5 cm of the green part and discard, as well as about 2 cm of the root. Then cut everything into 2 cm pieces. Peel and dice the potatoes. Add the turnip greens and potatoes to the meat and pour in the remaining water. Bring to a boil briefly and simmer for another 20-30 minutes. Season with salt and pepper.
