Ingredients for 4 servings:

  • 200 g beans (black-eyed peas or börülce) from the Turkish supermarket
  • 2 carrots
  • 2 potatoes
  • 2 onions
  • 5 tomatoes
  • 2 cloves garlic
  • 1 tbsp tomato paste
  • 6 tbsp olive oil
  • ½ liter of water, hot
  • some dill
  • some salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 1 day 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 day 1 hour 35 minutes

Black-eyed peas with vegetables

Wash the black-eyed peas and soak them in warm, salted water overnight. The next day, sift the beans. Peel and dice the remaining vegetables, then add the potatoes, carrots, onions, garlic, and tomatoes to a pot and fry in olive oil. Add the tomato paste and stir in the beans. Season with salt. Add the hot water and simmer for 45 minutes over medium heat. Turn off the heat and let stand for about 30 minutes. Serve lukewarm with chopped dill and fresh bread.
