Cigarette börek with minced meat

Ingredients for 2 servings:

  • 140 g minced beef or lamb
  • ½ bunch parsley, finely chopped
  • 10 g tomato paste
  • 1 tsp mint, finely chopped
  • 1 small chili pepper(s), red, finely chopped
  • 50 g onion(s)
  • 4 sheets of dough (yufka or filo), available at Turkish grocery stores
  • salt and pepper
  • 100 g tomatoes
  • Garlic
  • Paprika powder

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sigara Börek is rolled like a cigar. Mix the minced meat with finely chopped parsley, chili, and peppermint. Stir in the tomato paste. Peel the tomato skin and discard the seeds and liquid. Dice the tomato and mix with the minced meat. Finely dice the onion and add it. Season with pepper, salt, paprika, and garlic. Moisten the pastry sheets with a little water. Fill 1/4 of each sheet with the minced meat filling, leaving a small edge. Fold the sides in and roll everything up. Heat plenty of oil in a pan and deep-fry the Sigara Börek for 3-4 minutes until light brown. Drain.
