Ingredients for 1 servings:

  • 1 kg minced meat, e.g. lamb or half beef and half pork
  • Thyme
  • 4 tbsp tomato paste
  • 25 yufka dough sheets
  • 250 ml oil
  • 1 egg(s)
  • Salt

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 3 minutes; Total time approx. 1 hour 3 minutes

makes about 25 rolls

Fry the minced meat in a little oil until crumbly. Add the thyme and tomato paste and season with salt. Let cool slightly. Place the yufka leaf wide side down and arrange about 2 heaped tablespoons of minced meat in a line about 1 cm from the bottom edge. Brush the sides with beaten egg, fold them in slightly, and roll them up to form cigar-shaped sticks. Heat the oil in a pan and fry the cigars for 3-4 minutes. For a vegetarian version, you can replace the minced meat with crumbled goat cheese and chopped parsley.
