Ingredients for 3 servings:

  • 500 g beans, green, broad (Turkish)
  • 4 large potatoes
  • 2 onions, diced
  • 2 large beefsteak tomatoes or pureed tomatoes
  • 3 garlic cloves, chopped, possibly more
  • 4 tbsp tomato paste
  • 3 tsp black cumin
  • Paprika powder
  • 1 pinch(s) of sugar
  • olive oil
  • 300 g minced meat, if desired
  • Salt or vegetable broth

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

broad Turkish beans, potatoes, tomatoes

Sauté the onions and garlic in oil (together with the minced meat, if desired). Add the peeled tomatoes or tomato puree and the black cumin. If you don’t like meat, you can omit it. Carefully remove the bean strands with a potato peeler (only with larger beans) and cut them into pieces about 3 cm long. Add them to the pan and simmer covered for about 5 minutes. Meanwhile, dice the potatoes and add them as well. Simmer covered until all ingredients are tender (about 20 minutes). Season to taste with salt, paprika (hot), and a pinch of sugar. You can serve this with bread—but we don’t think it’s necessary.
