Nici's bulgur salad

Ingredients for 8 servings:

  • 500 g bulgur
  • 1,250 ml broth
  • 1 cucumber(s)
  • 3 tomatoes
  • 3 bell peppers, red and yellow
  • 1 large onion(s)
  • 2 bunches of flat-leaf parsley (chopped)
  • 4 tbsp oil (olive or sunflower)
  • 4 lemons
  • 1 clove(s) garlic, (finely chopped)
  • Sugar
  • Salt
  • Mint, chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Rinse the bulgur in cold water, add it to the broth, and bring to a boil. Simmer for 5 minutes, then turn off the heat. Cover and let it simmer until the bulgur has absorbed all of the broth. Transfer to a bowl, add oil, stir, and let cool slightly. Wash, trim, and dice the cucumbers, tomatoes, and bell peppers. Add to the bulgur. Squeeze the lemons and add the juice. Peel and dice the onions, and add them. Add the parsley, garlic, sugar, salt, and a little mint; mix everything well and season to taste. Let it simmer and season again. Tip: If you like, you can add chopped chili peppers or sambal oelek to taste.
