Oriental bulgur salad

Ingredients for 6 servings:

  • 200 bulgur
  • 500 ml water
  • 3 tbsp soy sauce
  • 4 tbsp lemon juice
  • 5 tomatoes
  • ½ cucumber(s)
  • 3 cloves garlic
  • 2 onions
  • 1 bunch of parsley
  • 1 bunch peppermint
  • 7 tbsp olive oil
  • Salt
  • pepper
  • 5 tbsp paprika powder (Tatli Biber)

Instructions

Working time approx. 25 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 25 minutes

Bring the bulgur, water, soy sauce, and lemon juice to a boil briefly, then remove from the heat and let it swell. In the meantime, dice the cucumber and tomatoes. Peel the garlic and onions and chop them very finely. Wash and finely chop the parsley and mint. In a salad bowl, mix the herbs with the oil, Tatli Biber (available in Turkish grocery stores), the onions, the garlic, salt, and pepper. Then add the bulgur and the diced tomatoes and cucumber and let it sit for at least 6 hours.
