Zucchini fritters

Ingredients for 4 servings:

  • 4 medium-sized zucchini (approx. 1 kg)
  • 3 small onions
  • 3 eggs
  • 2 tbsp mint, dried
  • 1 clove(s) garlic
  • 150 g flour
  • salt and pepper
  • Paprika powder, hot
  • Oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Mücver (Turkish)

Finely grate the zucchini and onions into a bowl. Add the remaining ingredients and mix into a thick batter. Heat a little oil in a pan. Drop in the batter a tablespoon at a time and flatten, then fry for a few minutes on both sides until golden brown. Drain any excess oil on kitchen paper and serve hot or cold.
