Ingredients for 4 servings:
- 4 eggs
- 1 bunch of spring onions
- 3 pointed peppers, green
- 1 class can/n tomatoes, approx. 400 g
- some oil for frying
- salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Chop the vegetables. Add a little oil to the pan and briefly fry the onions and bell peppers. Next, add the tomatoes. Simmer for about 5 minutes. Add the eggs to the bell pepper and tomato mixture. Season with salt and pepper, and stir and fry until the eggs are completely cooked. It’s ready to serve. I baked flatbread with it. Tips: I always garnish with parsley and chili. If you prefer other vegetables, feel free to use them. Then it’s just a completely different recipe. But just as delicious.
