Almond marzipan cake

Ingredients for 1 servings:

  • 6 egg yolks
  • 1 pinch of salt
  • 200 g powdered sugar
  • 200 g almond(s), ground
  • 100 g almond flakes
  • 250 g marzipan
  • 50 g butter, room temperature
  • 2 tbsp yogurt
  • 1 tsp, leveled orange peel, grated
  • 1 tbsp rose water, can also be omitted
  • 2 tbsp Amaretto
  • 5 drops of bitter almond flavor
  • 1 shot of milk
  • 50 g flour
  • some powdered sugar for dusting

Working time approx. 15 minutes; Total time approx. 15 minutes

Whisk the egg yolks with powdered sugar and salt until creamy. Cut the marzipan into small pieces and whisk separately with the yogurt, orange zest, rose water, Amaretto, a little milk, bitter almond flavoring, almonds, and butter until smooth. Then stir into the egg mixture and finally fold in the sifted flour. Pour the batter into a springform pan or a 20 x 30 cm (approx.) baking frame and sprinkle with the flaked almonds. Bake at 175°C (350°F) for 30-35 minutes until golden brown. Dust with powdered sugar.
