Instructions

with broad white beans

Cut the squid fillets into small pieces, first removing the dull skin. Set the squid pieces aside. Finely chop the onions and bacon and fry them in a little olive oil in the pan, then deglaze with white wine. Then add the chopped tomatoes, the sliced bell peppers, and the chopped zucchini, and top with the pizza tomatoes. Also add all the chopped herbs. Simmer for about 30 minutes. Finally, add the cooked white beans and the sliced squid. Squid cooks very quickly; it doesn’t take longer than about 7 minutes. It also depends on how thickly the fillets are cut. Season to taste with a little salt, as the fish is already salty, and with lime juice. A little chili also goes well. Serve with fresh baguette or bulgur wheat as a side dish.
