Delicious Spanish potato salad

Ingredients for 4 servings:

  • 1 kg potatoes
  • 4 carrots
  • 1 red bell pepper(s)
  • 1 vegetable onion(s)
  • 1 can of tuna
  • 250 ml vegetable stock
  • some vegetable oil
  • some vinegar
  • 3 garlic cloves
  • salt and pepper

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the potatoes and carrots and cook until soft. In the meantime, dice the bell pepper and slice the onion into half rings. Whisk the vegetable stock with the oil and vinegar in a salad bowl to make a dressing. Now thinly slice the garlic and add them to the dressing along with the tuna and onion rings. After cooking, let the potatoes and carrots cool slightly (but they should still be warm), slice them, and add them to the bowl. Season everything with salt, pepper, and perhaps more garlic and vinegar! Serve with fresh baguette, garlic chicken thighs, tapas, or grilled food.
