Ingredients for 1 servings:
- 125 g butter
- 250 g flour, wheat flour
- 3 eggs
- 1 pinch of salt
- 1 vegetable onion(s)
- 2 bell peppers, yellow
- 2 bell peppers, red
- 150 g zucchini
- olive oil
- Salt
- Pepper, freshly ground
- Paprika powder, sweet
- 1 bunch of parsley
- 100 g cheese, grated Gouda
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Knead the butter with the flour, 1 egg, 2 tablespoons of cold water, and the salt to form a dough. Peel and finely chop the onion. Dice the bell peppers. Coarsely grate the zucchini. Heat the oil in a pan. Fry the onions until translucent, add the bell peppers, and fry for five minutes, then stir in the grated zucchini. Season to taste and let cool. Grease a 28cm springform pan with oil and line the dough with it. The edges should be three cm high. Prick the dough several times with a fork. Whisk the remaining two eggs with the grated cheese and add the herbs. Mix the egg and cheese mixture into the vegetables and fill the pan with the dough. Bake the tart on the bottom rack at 200°C for 40 minutes.
