When buying mushrooms, make sure the heads are large enough to fit a slice of sausage inside each one. Clean the mushrooms, remove the stems, and season the heads with salt. Slice chorizo, or spicy kabanossi, and press them into the mushroom heads. Place the mushrooms topside down on an oiled baking sheet, sprinkle with coarse pepper, and grill in the preheated oven for about 5 minutes, until they begin to sizzle. Serve immediately. This recipe is quick to prepare, even for a party.
