Ingredients for 30 servings:
- 3 m.-large zucchini
- 2 packs of cream cheese
- 15 slice(s) Serrano ham, halved lengthwise
- 2 cloves garlic, finely chopped
- salt and pepper
- Olive oil, for frying
- 1 piece(s) lemon(s)
- 2 tbsp parsley, finely chopped
- 1 tbsp basil, finely chopped

Cut the zucchini lengthwise into very thin slices using a mandoline (or a knife if you can). Spread the slices with cream cheese and top with half a slice of ham. Season with salt and pepper, and sprinkle with garlic. Roll up the slices and secure with a toothpick. Brown the snails in the oil and arrange on a platter. Drizzle with lemon juice and sprinkle with parsley and basil.
