  • 100 g paprika sausage (chorizo)
  • 140 g tomato paste
  • 120 ml white wine
  • 1 red bell pepper(s)
  • 1 shallot(s) or
  • onion(s), red
  • 2 cloves garlic
  • possibly oregano
  • possibly marjoram
  • possibly salt and pepper
  • possibly chili
  • e.g. olive oil
  • possibly olives, black
  • some Parmesan

Grease a pan and heat a little olive oil. Cut the chorizo ​​into small cubes (removing the skin if necessary) and fry in the pan. Thinly slice the shallot or onion and add it as well. Then add the tomato paste. Only add the chopped garlic now, otherwise it will become too dark and bitter. Deglaze with white wine, add the herbs, and simmer for a few minutes. Season to taste with salt, pepper, and chili (if you use good quality chorizo, you probably won’t need any additional seasoning). If you like, add a few black olives. This goes best with short pasta such as penne, rigatoni, or fusilli. Finish with Parmesan cheese and enjoy.
